Easy Oven Roasted Vegetables

These easy oven-roasted vegetables with balsamic vinegar and our KOYAH kale powder are perfect for serving during your holiday meal. Cranberries and walnuts add a festive touch to this simple recipe.

Preheat your oven to 400 degrees. 

In a bowl, combine the following ingredients: 

1 lb brussels sprouts trimmed and halved 
1/2 red onion chopped 
4 carrots peeled and chopped 
1 cup walnuts 
1 tsp chopped rosemary 
1 tsp thyme 
1 scoop KOYAH kale powder (or 1 cup chopped kale) 
2 tbsp olive oil 
2 tbsp balsamic vinegar 
salt to taste 

Mix, and then spread onto a baking sheet—Bake at 400F for 25 minutes. 

Once the vegetables are removed from the oven, mix in 1/2 cup of dried cranberries. 

Serves 4
