Spinach Quinoa Salad

We love this spinach quinoa salad. This dish is a perfect side or as a main course. 

Ingredients: 

1 cup cooked Quinoa 
1 scoop KOYAH spinach powder (or 1 cup chopped fresh spinach) 
2 tbsp olive oil
One can of garbanzo beans (rinsed & drained) 
1/4 cup chopped cilantro
1/2 cup cherry tomatoes
1/4 cup diced red onion 
2 to 3 scoops KOYAH lemon powder (or one freshly squeezed lemon) 
1/2 tbsp liquid amino acids or soy sauce
1 tbsp garlic powder
salt and pepper to taste

Step 1. Rinse the quinoa before cooking.

Step 2. Combine 1 cup quinoa and 2 cups water to a medium saucepan. Bring to a low boil, once boiling, decrease down to a simmer. Cook until the quinoa has absorbed all the water. 

Step 3. Chop the tomatoes, red onion, and cilantro. 

Step 3. Once the quinoa has cooled, combine all the ingredients in a bowl and stir until everything is evenly mixed. 

This dish can be served, warm or cold. Store in the refrigerator when done. 

Serves 4
