Spinach Quinoa Salad

We love this spinach quinoa salad. This dish is a perfect side or as a main course. 

Ingredients: 

1 cup cooked Quinoa 
1 scoop KOYAH spinach powder (or 1 cup chopped fresh spinach) 
2 tbsp olive oil
One can of garbanzo beans (rinsed & drained) 
1/4 cup chopped cilantro
1/2 cup cherry tomatoes
1/4 cup diced red onion 
1 scoop KOYAH lemon powder (or one freshly squeezed lemon) 
1/2 tbsp liquid amino acids or soy sauce
1 tsp garlic powder
salt and pepper to taste

Step 1. Cook the quinoa. Combine quinoa, 1 tbsp of water, and 2 cups of water in a medium saucepan. Bring to a boil over medium-high heat. Once boil, decrease the heat to a simmer. Cook until the quinoa has absorbed all the water. 
Step 2. Chop the tomatoes, red onion, and cilantro. 
Step 3. Combine all the ingredients in a bowl and stir until everything is evenly mixed. 

This salad is enjoyable warm or cold.
